Kerala Style Kothu Parotta


Ingredients


Wheat parotta cut into small pieces – 4 nos.
Onion chopped – 1 big no.
Green chillies cut into pieces – 2 nos.
Ginger garlic paste – 1 tsp
Red chilli powder – ½ tsp
Coriander powder – ¼ tsp
Turmeric powder – ¼ tsp
Pepper powder – ¼ tsp
Garam masala – ¼ tsp
Tomato chopped – 2 nos.
Egg – 2 nos.
Chicken curry gravy - ½ Cup
Coriander leaves – a few chopped
Salt to taste

Method


Cut the parotta into small pieces and keep it aside. In a pan, heat oil, add the chopped onions, green chillies & ginger garlic paste. Keep mixing with a spatula & allow it to turn light brown in color. Add turmeric powder, red chilli powder, pepper powder, Garam masala & salt. Mix everything well together. Add the chopped tomatoes. Mix and allow it to cook and blend nicely. Add the eggs and mix and allow it to blend well with the masala. Add in the parotta pieces. Add in the coriander leaves. Add chicken curry gravy and mix and combine everything together. Add salt if required. Serve as a snack during tea time.
