Kerala Koottu Curry/ Mixed Potato Curry


Ingredients


Deskined Potatoes cut into cubes – 3 nos.

Green chilli – 2 nos.

Small onion – 10 nos.

Tomato – 1 no.

Thick consistency Coconut milk - 1 cup

Thin consistency Coconut milk – 2 cup

Garam masala – 1 tsp

Turmeric powder – ¼ tsp

Red chilli powder – ½ tsp

Coriander powder – 1 ½ tsp

Salt to taste

Mustard seeds – 1 tsp

Curry leaves – a few to garnish

Oil – 2 tbsp

Method

Heat a pan, add oil, then add in the mustard seeds and when it starts to splutter, add small onion, green chilli & the cut potato pieces and saute well together till it gets cooked till medium. Add the masala powders of red chilli powder, turmeric powder, coriander powder. Now add the cut tomato pieces. Then add the thin consistency coconut milk. Mix and combine & cook till the gravy thickens. Now add the garam masala and salt to taste. Then add the thick consistency coconut milk. Mix and combine everything well together. When the gravy thickens and the potato is well cooked and done, garnsh with curry leaves and serve with rice or chappatti.
